A Tale of Silky Smooth Shami Kebab

There is quite a funny story behind the origin of the Shami Kebab, a minced meat kebab that literally melts in your mouth. It’s said that a chef invented this silky smooth kebab during the Mughal era – for a toothless Nawab of Lucknow. The Nawab was so fat from overindulgence that he couldn’t get on a horse, and his teeth were all gone, presumably for the same reason. So a kebab was made so fine that it required no teeth to eat it. Interesting right?

Well, we have no idea whether this story is true, but we do know that these delightful little appetizers are incredibly soft and smooth to please your taste-buds. It is made of minced mutton, chana dal and spices. The meat is ground and mixed with chickpeas, lentils or other fillers. A variety of spices are added. Among the many spices, cumin is a favorite as well as cardamom, usually ground from the larger whole seed. Other spices, like peppercorns, ginger, or even cinnamon are also included.

You would agree that nothing comes close to hot and delicious barbeque meat on a cold winter night. But do you know the difference between the two – Barbecuing & Grilling? Some people tend to confuse barbecuing with grilling.  Though both are a method and apparatus for cooking meat, they share a difference in their cooking time and the type of heat used.

The term “grilling” refers to cooking food over a direct flame. On the other hand, uses indirect heat or low-level heat to cook foods – usually meats. Grilling cooks meat relatively quickly as the direct heat is imparted to the food by a charcoal fire. On the other hand, barbeque is a much slower method of cooking meat. In the barbeque, the heat is indirectly imparted to the meat by cooking and smoking the meat over charcoal or wood.

You can say, barbecuing is generally done “low & slow” and grilling is usually “hot & fast”. Barbeque is usually done in outdoor spaces. For restaurants, special metal ovens are designed for that purpose. Some restaurants manage to cook the meat in large brick.

Celebrate Ganesh Chaturthi with delicious ‘Motichoor Ladoo’

It is hard to imagine the celebration of Ganesh Chaturthi without lip-smacking ‘Motichur ladoo’, which is also considered the favorite food of Lord Ganesha. So today, on this joyous occasion of Ganesh Chaturthi , we bring you a quick and easy recipe to help you prepare heavenly delicious Motichoor Ladoo in a matter of minutes .

Celebrate Ganesh Chaturthi with delicious 'Motichoor Ladoo'

Ingredients
2 ½ cups gram flour
500 ml milk
½ tsp cardamom powder
3 cups ghee
almonds and pistachios for garnishing

Syrup
2 ½ cups sugar
3 ½ cups water
2 tsp milk
3 cups ghee

Directions to make Motichoor ladoo :

Boil sugar and water till the sugar melts. Add milk and boil for 3-4 minutes till a scum forms on the top. Strain and boil again. Add cardamom powder and color and mix well. Keep this syrup aside.

Mix flour and milk to make a smoother batter. Heat ghee in a frying pan and use a perforated (holes) spoon to drop boondis in ghee. Rub the batter on the spoon with holes so that small drops of batter drop in oil. Fry boondis till golden brown, remove and keep aside. Repeat for remaining batter.

Put the fried boondis in the syrup and spread it on a plate. Sprinkle little hot water and shape ladoos with moist palms after leaving for 5 minutes. Let it cool.

Motichoor ladoos are ready.
